I kinda feel the same way about vegetables. Yep, you heard me right. There are veggies out there that are underdogs. Left behind in the grocery store, snubbed at the farmers market. I'm talking about kohlrabi, celeriac, beets and Don's favourite: rutabaga. If you've never tried a vegetable I'm desperate to get you to try it. Collard greens and Swiss chard are a favourite to surprise guests with. It's like everyone (and every vegetable) deserves a chance and I'm the one to bring it to them.
Rutabaga Apple Soup
1 Tbsp olive oil
1 leek, white parts only chopped
1 onion, chopped
1 carrot, chopped (about 1/2 cup)
1 sweet potato, chopped (about 1cup)
1 rutabaga peeled and chopped (about 4 cups)
1/2 tsp sage
6 cups chicken broth (homemade if possible)
1 apple, chopped
salt/pepper to taste
In a large pot, saute leek and onion in olive oil over medium heat for about 5min until softened. Add vegetables, broth and apples and bring to a boil. Lower heat and simmer until all veggies are tender. About 30 min. Remove from heat and puree in blender. Season with salt/pepper. Enjoy!
